Easy Broil Sole
6 Fillets of Sole
Rinse and pat dry. Dribble lemon over fish 3 or 4 hours before broiling. Cover and place in refrigerator. Remove from refrigerator. Sprinkle a little salt over fish Fillets. Sparingly spread about 1/2 teaspoon Dijon mustard on fish. Roll in bread crumbs. Sprinkle grated Parmesan cheese over Fillets. Dribble about tablespoon of butter over fish. Place in broiler 8 minutes. Before serving, sprinkle with paprika.
