Low Cal Blacked Redfish
1 1/2 Tbsp. butter
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 Tbsp. paprika
1/2 tsp. salt
1/2 tsp. each oregano and red pepper
1/4 tsp. each white pepper and black pepper
4-5 oz. Redfish Fillets (any firm White Fish will work)
Melt butter in small saucepan. Add onions and garlic. Cook until softened. Add spices and stir until mixed well. Cool.
Spray broiler rack with non-stick cooking spray (or grill rack). Rub spice mixture on both sides of fish. Broil (or grill) until cooked (5-7 minutes). Serve hot with lots of water to drink!!
