Black Cod, Chinese Style
2 1/2 lb Fresh black cod or sablefish
4 tb Dark soy sauce
2 tb Honey
3 tb Dry sherry
2 ts Sesame oil
Mix together the soy sauce, honey, sherry and sesame oil in a bowl. Add the
fish and allow to marinate several hours, turning occasionally. Bake at 350
degrees for about 20 minutes, depending on thickness. Baste the fish with
the marinade once or twice during cooking. The secret to this dish involves
not overcooking it.
