Baked Italian Fish
1 1/2 lb Cod, haddock or bluefish fillets
1 tb Lemon juice
1 Green onion, chopped
1 ts Dried thyme
1/4 ts (approx.) each salt & pepper
1 cn (14 oz.) tomatoes, drained and chopped
1 c Shredded Cheddar or Monterey Jack cheese
In greased casserole, arrange fillets in single layer, folding thin ends
under for equal thickness. Drizzle with lemon juice; sprinkle with onion,
1/2 tsp. of the thyme, salt and pepper.
Combine tomatoes with remaining thyme; season with more salt and pepper to
taste. Spoon over fish.
Bake in 425 degrees F oven for 10 minutes. Sprinkle with Cheddar; bake for 2 to 3
minutes or until Cheddar has melted and fish flakes easily when tested with
fork. Makes 4 servings.
