Broiled Stuffed Flounder
6 small flounders, cleaned, split & the backbone removed without separating the top from the bottom
2 Tbsp. green peppers, finely chopped
1 medium onion, finely chopped
2 tsp. parsley, chopped
Salt and pepper to taste
1/2 tsp. Tabasco pepper sauce
1 clove garlic
3 cups Crab Meat
1/2 cup celery, chopped
1 - 2 pimientos, chopped
1/2 cup butter
Melt butter in a heavy saucepan and saute the seasonings. Add the salt, pepper and Tabasco pepper sauce. Cook until vegetables are tender and the onion takes on a color. Remove, cool and add Crab Meat. Mix thoroughly. Stuff the flounders with the Crab Meat mixtures, fasten halves with skewers and arrange the stuffed fish on a buttered dish. Sprinkle with salt and white pepper and broil slowly, basting frequently with mixture of butter, lemon, juice, until golden brown. First on one side, then the other.
