Fish Vera Cruz
1 1/4 lb Fish fillets or steaks *
1 tb Lime juice
1 md Onion; sliced
1 md Green pepper
1 Garlic clove; minced
1 tb Vegetable oil
2 md Tomatoes
1/2 c Heinz chili sauce
1/4 c Sl. pimiento-stuffed olives
1 ds Red pepper
Capers for garnish; optional
* Purchase fish that is about 1/2" thick.
Cut green pepper into 3/4" cubes and the tomatoes into chunks.
Sprinkle fish with lime juice; set aside. Saute onion, green pepper, and
garlic in oil until tender-crisp. Add tomatoes and remaining ingredients.
Simmer until most of liquid evaporates, about 3 to 5 minutes. Place fish in
skillet, spooning sauce over.
Simmer 3 to 4 minutes. Turn fish and spoon sauce over.
Simmer 3 to 4 minutes or until fish turns opaque and just flakes when
tested with fork. To serve, spoon sauce over fish and garnish with capers,
if desired. This recipe serves 4.
