4 fresh or frozen Flounder or Sole Fillets (12 oz.)
1 (10 oz.) can sliced mushrooms, drained
1 Tbsp. chopped pimento
1/2 cup evaporated skim milk
1/2 cup shredded process Swiss cheese (2 oz.)
1/8 tsp. ground nutmeg
Thaw fish. In mixing bowl: mushrooms, spinach, pimento and 1/8 teaspoon salt. Divide mixture evenly among 4 baking dishes. Place uncooked fish Fillets atop mixture (even thickness). In saucepan: mix milk, cheese, nutmeg, pepper, 1/8 teaspoon salt; cook and stir until cheese is melted, pour over fish and sprinkle with paprika.
May store in freezer in sealed bag up to 2 months. Cover with foil and bake at 375 degrees F for 45 minutes, or until fish flakes. Or microwave on medium high for 8 to 9 minutes.
