Fried Catfish in Cornmeal
2 cups shortening -- up to 3
1 cup cornmeal
1/2 cup flour
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 pound boneless catfish
Heat shortening in deep fryer or deep saucepan.
Combine cornmeal, flour, salt, pepper, garlic salt and onion salt in paper or plastic bag. Put 3 or 4 pieces of fish in bag. Shake until well coated.
Fry fish in hot shortening until brown and tender.
