1 1/2 lbs. Flounder (or other fish fillet) cut into 1 1/2 inch strips
1 lb. backfin Crab Meat
1/2 cup dry bread crumbs
4 cups Newburg sauce
1/4 cup margarine
Wash and dry fish thoroughly. Mix Crab Meat, bread crumbs and 1/2 cup Newburg sauce. Place spoonful of stuffing on each fillet; roll up firmly and place small end down on foil-lined pan. Sprinkle with salt and paprika. Dot with margarine.
Bake at 350 degrees F until fish flakes easily when tested with fork, approximately 20-30 minutes. Heat remaining Newburg sauce. Pour over fish on serving platter and serve immediately.
