New England Fish Chowder
1/2 tablespoon margarine
3/4 cup onion -- chopped
1 garlic clove
1 bay leaf
1 fresh parsley
1 1/2 cups water
1/2 cup skim milk
1/2 teaspoon thyme
fresh ground black pepper -- to taste
1 pound fresh or frozen fish fillet -- white, cut in bite-s
Melt margarine in pan, saute onions and garlic. Add all other ingredients. Simmer soup for 45 minutes.
