Grilled Fish Steaks
1 1/2 lb. Salmon, Swordfish, or Halibut, Steaks 3/4-1" thick
1 tsp. salt
1/4 tsp. pepper
1/4 cup melted butter
1 Tbsp. lemon juice
1 tsp. dried chervil leaves
Sprinkle fish Steaks with salt and pepper. Mix butter, lemon juice and chervil. Cover and grill fish about 4 inches from medium coals, turning once and brushing 2-3 times with butter mixture, until fish flakes easily with fork, 15-25 minutes. Cut into serving pieces. Serve with lemon wedges.
