Blackened Fish

Cajun Spice
1 tb Paprika
1 ts Salt
1 ts Onion powder
1 ts Cayenne powder
1 ts Garlic powder
1 ts Chilies, crushed
1 ts Ginger
3/4 ts White pepper
3/4 ts Black pepper
1/2 ts Thyme
1/2 ts Oregano

4 lb Fish, firm-fleshed
6 tb Butter
2 ea Lemons
1 tb Cajun spice

The fish should be fillets about 25 mm thick (1-1/2"). Trout, perch, shrimp, or any firm-fleshed fish will work well. Make sure to only make this recipe in a well-ventilated area! Cut lemons into wedges. Mix all Cajun Spice ingredients together in a small bowl. Store in an airtight container. Melt butter in cast-iron or heavy-bottomed frying pan over medium high heat. Add Cajun spice and heat thoroughly. Place fillets in pan. Squeeze juice of one lemon into pan. Cook fish for about 5 minutes on each side. Serve with remaining lemon wedges and pan drippings.
