2 bluefish fillets
2 carrots
2 tomatoes
2 tablespoons finely-chopped fresh basil
2 tablespoons olive oil
1 cup dry white wine
1 small onion
1 small red or green pepper
4 celery stalks

Preheat grill. Finely dice the onion, red pepper, celery, carrots and tomatoes. Mix together with basil.

Create a foil pouch large enough to accommodate fish and vegetables. Place vegetable mixture, olive oil and white wine in the pouch. Add the fillets on top of the mixture.

Seal the pouch and place on grill. Cook for 15 minutes over medium heat. Remove from heat and you have a complete meal with fish and vegetables.

This recipe yields 2 servings.
