Baked Fish

red snapper
butter-flavored spray
Orange Peel or Lemon Peel Spice
Ginger
Garlic
Cayenne Pepper

Pre-heat oven to 450 degrees and line pan with aluminum tin foil.

Spray both sides of Red Snapper Fish Fillets (or any other fish fillets) with butter-flavored spray.

Sprinkle both sides of each fillet with:

Orange Peel or Lemon Peel Spice
Ginger
Garlic
Cayenne Pepper

Cook covered in aluminum tin foil for about 30 minutes, then uncover and sprinkle with fresh lemon juice. Let fish bake, uncovered, for an additional 10 minutes.

You want the fish to bake at a high temperature long enough to get rid of the watery (slimy, for lack of a better word) texture, then finish baking uncovered long enough to get a slightly crisp texture to the outside. This recipe is excellent for cat fish or any other fish you might prefer.

On the grill, cook for 15-20 minutes before removing foil and cooking for 10 minutes uncovered.
