Fish and Rice Mexicali
3 c Cooked brown rice
16 oz Mild picante sauce
1/4 c Chopped green peppers
1 lb Fish fillets cod; sole, flounder
2 tb ;melted margarine
1 ts Herb seasonings
Mix rice, 1 cup picante sauce and green peppers together. Place in casserole dish. Place fish fillets over rice mixture. Pour melted margarine over fish nad sprinkle with seasoning. Pour remaining picante sauce over fish. Cover with plastic wrap. Microwave on hi for 7- 10 minutes. Fish is ready to serve when if flakes easily when tested with a fork.
