Fish Chowder, Healthy
2 Tbsp margarine
3 Tbsp carrot -- shredded
2 Tbsp celery -- diced
2 Tbsp onion -- minced
3 Tbsp flour
3 1/2 cup skim milk -- divided
2 cup baking potatoes -- peeled and diced
1/2 Tsp salt
1/4 Tsp pepper
1 Lb Cod -- cut in 1" pieces Or Lean White Fish
Melt margarine in a saucepan over medium heat; add carrot, celery and onion and saute 2 minutes.
Stir in flour; gradually add 2 1/2 C milk, stirring constantly with a whisk.
Add potato, salt, and pepper and bring to a boil.
Reduce heat; and simmer uncovered for 30 minutes stirring occasionally.
Add fish and 1 cup milk; cook an additional 10 minutes or until fish is done.
Serve with oyster crackers.
