Lobster Sausage

4 Feet small hog casings
1 1/2 lb Whitefish fillet, cubed
1/2 ts Ground mustard seed
1/2 ts Ground coriander
1 ts Paprika
1 ts Lemon juice
1/2 ts White pepper
1 Egg, beaten
1/2 lb Coarsley chopped lobster met

Prepare casings. Pulse the fish in food processor just until it is broken, 3-4 times.. Add the mustard, coriander, paprika, lemon juice, pepper and egg. Process until blended. Put the mixture in a mixing bowl and add the lobster meat; blend well. Stuff casings and twist off into 3-4" links.
