Catfish Appetizer Nuggets

Nuggets
2 lb Catfish fillets
1 c Round cheese crackers
1/2 c Grated Parmesan cheese
1/4 c Sesame seeds
1/2 t Salt
1/4 t Black pepper
1/2 c Butter or margarine,melted


Sour Cream Blue Cheese Dip
1 pk Dairy sour cream(8oz)
2 T Crumbled blue cheese
1/4 c Minced onion
1/4 t Salt
Chopped fresh parsley


Nuggets:


Thaw frozen fish fillets according to package directions.


Cut fillets into 1-inch cubes and set aside.


Combine cracker crumbs, Parmesan cheese, sesame seeds, salt and pepper in small bowl and set aside.


Dip fish cubes in melted butter; roll in crumbs mixture.


Place fish cubes 1/2 inch apart on fole-lined baking sheets.


Bake uncovered in preheated 400' oven for 20 minutes, until cubes are golden brown.


Serve immediately with Sour Cream Blue Cheese Dip.


Sour Cream Blue Cheese Dip:


Combine sour cream, blue cheese, onion and salt in a small mixing bowl; cover and refrigerate.


When ready to serve, garnish with chopped parsley if desired.
