A Devil of A Squid

1 cup minced carrot
1/3 cup minced celery
2 tsp. minced garlic
1 1/2 cups chopped tomato, peeled and seeded
1/2 cup chopped fresh basil
3 Tbsp. tomato paste
1 tsp. oregano
1/4 tsp. fresh ground pepper
1/4 tsp. dried red pepper flakes
2 lbs. Squid, cleaned and sliced 3/4 inch
Freshly cooked pasta

Saute carrot, celery and garlic in olive oil in medium skillet over low heat until tender about 20 minutes. Increase heat to medium low. Add chopped tomato, basil, tomato paste and seasonings and simmer until sauce is very thick. About 20 minutes.

Reduce heat to low. Add Squid and simmer until cooked through, stirring frequently, 10 to 12 minutes. Spoon over pasta and serve immediately.
