Shinnecock Flounder Fillets Epicure

6 flounder fillets
1/2 pound firm white mushrooms
1/2 cup chopped chives
2 tablespoons lemon juice
1 cup light cream
1/8 teaspoon nutmeg
1 pinch cayenne pepper
3 tablespoons butter
Paprika -- to taste
Salt -- to taste
Freshly-ground black pepper -- to taste

Arrange fillets in a buttered baking dish, cover with sliced mushrooms. Sprinkle with lemon juice and chives. Season cream with salt, pepper, nutmeg and cayenne.

Pour cream over fish and bake at 350 degrees for 15 minutes. Remove from oven, sprinkle with paprika and brown quickly under the broiler.

This recipe yields 6 servings.
