Quick Friday Special

1 Fillet or thin Fish Steak per person (Sole, red Snapper, etc.)
1/4 cup minced onion
Salt and pepper
1/4 cup butter, melted
Juice of 1/2 lemon
1/2 cup California white table wine
Chopped parsley
Lemon wedges

Heat oven to 450 degrees F. Line shallow baking pan with foil (makes cleaning a cinch); place in hot oven. When hot, brush pan well with butter; arrange fish in pan. Dot each piece with butter; sprinkle lightly with flour, onion, salt and pepper. Combine 1/4 cup melted butter, lemon juice and wine.

Bake fish in hot oven (450 degrees F) about 10-15 minutes, basting frequently with butter-wine mixture. Serve with chopped parsley and lemon wedges. Serve with French fried potatoes, a crisp green salad and French bread.
