Seafood Rolls

1 lb. Flounder or Sole Fillet, fresh or frozen
1/2 cup shredded Swiss cheese (2 oz.)
1 (2.5 oz.) jar sliced mushrooms, drained
1/4 cup plain low-fat yogurt
1 Tbsp. snipped chives
1 Tbsp. chopped pimento
1/2 tsp. salt
1/8 tsp. pepper
2 Tbsp. fine dry bread crumbs
1 Tbsp. plain low-fat yogurt
Non-stick vegetable spray coating
1/4 tsp. paprika

Cut fish into 4 portions, overlapping small pieces as necessary to make 4 rectangles. To bowl combine cheese, mushrooms, yogurt (1/4 cup), chives, pimento, salt, and pepper. Spread mixture on fish. Roll up Fillets around filling and place seam side down in a 10 x 6 x 2 inch baking dish that has been sprayed with vegetable spray coating.

Combine bread crumbs and paprika. Brush fish with the 1 tablespoon yogurt and sprinkle with crumb mixture. Bake at 350 degrees F for 20-30 minutes, or until fish flakes easily when tested with a fork.
