Fillet of Sole with A Hint of Mint

6 pieces Lemon Fillet of Sole
2 package frozen spinach, cooked
1 small package feta cheese, rinsed
3 Tbsp. lemon juice
1/2 tsp. salt
Dash of pepper
3 Tbsp. butter
1 Tbsp. parsley
Fresh mint, coarsely chopped or about 1/2 tsp. dried mint to taste

Cook and drain spinach, but keep hot. Place spinach in mixing bowl with crumbled feta cheese, salt, pepper, butter (should melt), mint, and lemon juice. Mix ingredients well. Divide ingredients into 6 equal parts.

Prepare Sole by brushing olive oil on one side of fish. Place spinach mixture onto middle of the oil side of fish. Fold fish into a roll. Place fish, ends facing down, onto a greased baking sheet. Sprinkle fish with paprika. Place into a preheated 325 degree oven for approximately 18-23 minutes.
