Cheesy Island Fish

2 pounds fillets -- cut serving size
1 teaspoon salt
1 cup Thousand Island salad dressing
1 1/2 cups crushed snack cheese crackers
2 tablespoons oil
Paprika -- as needed

Sprinkle fillets with salt. Dip fillets in salad dressing and roll in cracker crumbs. Place on a well-oiled baking sheet.


Drizzle fillets with oil and sprinkle lightly with paprika.


Bake at 500 degrees for 10 minutes per inch of thickness or until fish flakes easily and is no longer translucent in the center.


This recipe yields 6 servings.
