Fish Kibbee

2 lb. Haddock fillet
1 lb. fine bulghur, soaked
2 medium onions, grated
2 tsp. salt
1/2 tsp. white pepper
2 Tbsp. ground coriander kisibra
2 Tbsp. butter, cut in pieces


Using a food processor or meat grinder, pulverize fish thoroughly until it becomes very fine. Grind the onions fine. Add salt and pepper to fish and grind all together. Squeeze water out of bulghur and add to the fish mixture, using a little ice water to mix thoroughly. Fry kisibra in 1 tablespoon of butter and add to fish. Mix well. Prepare a baking dish generously brushed with oil. Pour in fish and bulghur mixture and using wet hands spread out smoothly and evenly. Cut with sharp knife into square or diamond shape. Brush top with oil and dot with 2 tablespoons of butter pieces. Bake at 375 degrees F until lightly browned, about 20-25 minutes.
