Fish In A Dish

2 lb Finnan haddie
3/4 c Evaporated milk
Black pepper

Cut off tail, wash fish. Put fish in a large kettle, cover with boiling water and put on the back of stove, so it will not boil, for 15 minutes. Drain and put fish in a baking dish. Sprinkle on pepper, dot with butter, surround with milk and bake about 20 minutes at 375F. spoon sauce over fish and sprinkle with parsley.
