Seafood Newburg

1 cup Crab Meat, flaked
2 cups Lobster, diced
1 can slivered pimento
3 1/2 cups milk
1 cup light cream
Salt and pepper
1 cup cooked Haddock, flaked
1 cup sliced mushrooms
1 cup Scallops
1 cup Shrimp
1/2 cup butter
1/2 cup flour
3 egg yolks
1/4 cup sherry

Melt butter, blend in flour; gradually stir in milk and cream; cook until thickened and smooth. Season to taste. Add seafood, mushrooms and pimento. Just before serving, stir in sherry and beaten egg yolks. Heat and serve over rice or in patty shells.
