Baked Fish with Vegetables
1 1/2 cups sliced onion
1/2 tsp. paprika
1 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne pepper
2 large tomatoes, sliced
1/2 lb. mushrooms, sliced
5 green onions, chopped
1/4 cup sherry
*1/2 cup buttered bread crumbs
1 1/2 lbs. fish Fillets (not Steaks), preferably Sole, Snapper, etc.
Smear 1/2 teaspoon olive oil in a glass pan. Heat 3 tablespoons olive oil and saute onion in a frying pan until transparent. Season with paprika and sugar and saute 1 more minute. Cover bottom of glass pan with onions. Rub fish with lemon and place over onions. Sprinkle with cayenne and salt and pepper. Top with sliced tomatoes. Heat 2 tablespoons of olive oil and saute mushrooms 2-3 minutes. Add sherry and saute 1 minute more. Add green onions and saute 1 minute. Place mixture over fish. Cover with wax paper and bake at 400 degrees F for 15 minutes. Uncover and top with bread crumbs and bake for additional 15 minutes. *Heat frying pan with 1 teaspoon butter and add bread crumbs and saute until slightly browned.
