Seafood Newburg

1/3 cup butter
1/3 cup flour
3 cups milk
1 1/2 Tbsp. prepared mustard
1 1/2 tsp. salt
1/4 tsp. paprika
1/4 tsp. pepper
1 cup Lobster Meat, cooked & cut up
2 cups Haddock, cooked
1 1/2 cups Scallops or Shrimp, cooked
1 cup mushrooms, sliced & cooked
1/3 cup cheese, grated


Melt butter; stir in flour and blend well. Add milk and cook over low heat, stirring constantly until thickened. Add prepared mustard, salt, paprika and pepper; mix well. Fold into seafood chunks. Add mushrooms. Turn into a greased 1 1/2 to 2-quart casserole. Sprinkle with grated cheese. Bake in a moderate oven for about 25 minutes, or until sauce starts to bubble.
