Southern California Foil Steamed Halibut

1 Tbsp. butter or margarine
6 Halibut Steaks, 3/4 inch thick
Freshly ground pepper
1 1/2 tsp. each lemon, orange, and lime rinds, very finely grated
1/3 cup chopped coriander leaves

Grease six 9 x 9 inch squares of foil with butter or margarine. Salt and pepper the Halibut Steaks; sprinkle each with a good pinch of mixed lemon, lime, and orange rind and 1 tablespoon of chopped coriander leaves.

Put the packets on a jelly-roll pan and bake 10 minutes in preheated 400 degree oven.

Open the foil packages and pour the cooking juices of all into a small pan. Reduce the juices by 1/3 and add the remainder of the lemon, lime, and orange rind mixture, coriander leaves, and butter. Place the fish on a plate and spoon 1 tablespoon of sauce over each steak.
