Catfish Chowder

2 lb Catfish fillets
2 c Fish stock
2 c Lt. cream or milk
4 Potatoes, peeled and diced
2 Stalks of celery, diced, with leaves
2 ts Salt
1 Clove minced garlic
2 md Onions, sliced
1/4 c Butter
1/2 ts White pepper
1/2 c Sherry


Saute onions and celery in bacon drippings until tender. Add all other ingredients except milk and cook over medium heat until potatoes are done. Add milk, heat on low. Do not let milk get too hot.
