Halibut with Confetti Squash

1 8-oz skinless halibut fillet
1 sm (4 to 5 oz) yellow squash, cut into 1/2-inch pieces
1 sm (4 to 5 oz) zucchini, cut into 1/2-inch pieces
3 tb Coarsely chopped roasted red pepper or pimiento
1/4 ts Dried tarragon leaves, crushed
1/4 ts Ground black pepper
2 Lemon or lime wedges


Cut halibut in half. In small bowl, combine remaining ingredients except lemon wedges


Place one piece of halibut on the side of large microwave-safe dinner plate. Place half of vegetable mixture next to halibut. Repeat with remaining fish and vegetables on another plate.


Cover plates with plastic wrap. Microwave each plate on high (100 percent) 3 minutes and 30 seconds. Puncture plastic wrap or uncover immediately to prevent wrap from shrinking onto food. Serve fish with lemon or lime wedges.
