Fish Florentine

1 lb Fish fillets -- flounder or Sole
10 Whole wheat crackers -- Crushed
2 tb Wheat germ
1 pk Frozen chopped spinach -- Thawed and drained (
3 tb Parmesan cheese


Arrange the fillets in the bottom of a shallow baking dish. Cover the fish with the well-drained spinach. Combine the cracker crumbs, wheat germ and cheese and pour over the fish and spinach. Bake, uncovered, at 400 degrees F for 15 to 20 minutes.
