New England Fish Chowder

2 lbs. white fish (haddock, halibut, cod)
4 oz. salt pork or bacon, diced
4 lg. potatoes
Salt to desired taste
1 qt. milk
2 sliced onions
Salt and pepper to taste


Simmer fish in 2 cups of water, remove and reserve liquid. Saute salt pork or bacon - remove and slightly brown onions in remaining fat. Cook potatoes in reserved fish stock adding a little salt and more water if necessary. Just before potatoes are done add fish and onions and simmer until done. Add milk and reheat. Add butter, salt and pepper to taste. Garnish with salt pork or bacon. Good warmed up too!
