Seafood Au Gratin

1 cup butter or margarine
1 cup flour
2 cups milk
2 cups light cream
1 cup chicken broth or white wine
2 cups sharp Cheddar cheese, shredded
2 tsp. salt
1/4 tsp. white pepper
1/4 cup minced onion
2 cups Crab or Lobster, cooked
2 cups Shrimp, cooked
2 cups Haddock or Flounder, cooked
Fresh dill or parsley


Melt butter, stir in flour and cook slowly, stirring constantly until bubbly. Gradually stir in milk, cream and chicken broth. Cook and stir until sauce is smooth and thickened. Stir in cheese, salt and pepper and onion. Continue cooking slowly until cheese is melted. Fold in seafood, heat through. Serve over hot rice. Garnish with sprigs of dill or parsley.


Makes 12 to 14 servings
