All In One Baked Fish Dinner

2 lb. fish Fillet (Haddock, Flounder)
Salt & pepper to taste
3 tsp. onion powder
1 cup peas & carrots (frozen or canned)
2 envelope vegetable bouillon mix
1 cup tomato juice or tomato sauce


Whip fish with damp towel. Place in covered casserole or use baking dish with tin foil cover. Season to taste with salt, onion powder, pepper. Pour tomato juice and vegetables (drained) over fish. Bake in 400 degree preheated oven until fish becomes flaky. Serve with baked potatoes, pickled beets, fresh salad.
