Creole Style Flounder

1 large green pepper, sliced in thin strips
1 1/2 cups green onions & tops, sliced
2 Tbsp. butter
1 can tomatoes, chopped (2 cups)
1 can tomato sauce (8 oz.)
Salt & pepper
1/2 tsp. ground thyme
1 bay leaf
1 1/2 lb. Flounder
3 cups cooked rice

Cook onions and pepper in butter until soft (not brown). Stir in tomatoes, tomato sauce, salt and pepper, thyme and bay leaf. Simmer 15 minutes. Remove bay leaf. Spoon over Flounder. Bake at 375 F for 15 minutes or until Flounder is flaky. Serve over a bed of rice.

Serves 4-6.
