Crispy Catfish

6 md Catfish
1 c Flour
1 c Corn meal
1 tb Salt
ds Red pepper
1/2 c Evaporated milk
ds Salt
12 sl Bacon


Clean and fillet fish. Combine flour, corn meal, salt and red pepper in a small paper bag. Mix milk and salt in a shallow bowl. Fry bacon in a heavy skillet until crisp; drain on paper towels and reserve drippings. Dip each fish fillet in milk, then drop in paper bag and shake vigorously. Drop fish into hot drippings and fry until golden brown. Serve with bacon.
