Avocado Smoked Salmon and Spinach Salad
1/2 lb Fresh baby spinach 2 Ripe avocados 1 tb Lemon juice 3 tb Olive oil 1 tb Balsamic vinegar Salt and freshly ground pepper 1/4 lb Sliced smoked salmon 1 ts Finely chopped tarragon Finely shred the spinach. Mix together olive oil, balsamic vinegar, tarragon, salt and pepper. Halve avocados. Remove stones, peel and chop. Toss with lemon juice. Cut smoked salmon into strips.
