Flounder Creole

2 cups chopped tomatoes
1 can (8 oz.) tomato sauce
1 onion, finely diced
1 green pepper, finely diced
1 bay leaf
1/2 tsp. dried thyme
1/4 tsp. pepper
4 slices Fillet of Flounder

Combine tomatoes, tomato sauce, onion and green pepper in a saucepan. Add bay leaf, thyme and pepper. Cook over low heat 15 minutes, stirring occasionally. Remove bay leaf.

Arrange Flounder Fillets in a flat baking dish. Spoon sauce over fish. Bake at 375 F for 20 minutes, or until fish flakes easily.

Makes 4 servings.
