Flounder Fillets In Foil

4 Flounder Fillets
Salt and pepper, to taste
1 Tbsp. onion, finely chopped
1/2 lb. mushrooms, sliced
3 Tbsp. dry white wine
1 Tbsp. lemon juice
1 Tbsp. parsley, chopped
Butter or margarine

Preheat oven to 400 F. Lightly butter four pieces of heavy duty foil. Place a fillet in each piece and season with salt and pepper. Saute onions in butter until soft; add mushrooms and cook 5 minutes. Add wine, lemon juice and parsley and continue cooking until most of the liquid evaporates. Spoon over fish. Draw edges of foil together and seal. Place on cookie sheet and bake 20 minutes. May be served in foil which has been opened and folded back.

Serves 4.
