Flounder Florentine

1 package frozen chopped spinach, thawed and well drained
2 Tbsp. chopped onion
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. seasoned salt
2 Tbsp. salad oil
1 lb. Flounder Fillets
1/2 cup medium white sauce
2 Tbsp. dry vermouth
1/2 cup grated Cheddar cheese


Place spinach in well greased shallow casserole. Add onion, seasonings and oil. Arrange fish Fillets in single layer over spinach. Add vermouth to white sauce. Pour over fish. Sprinkle with cheese. Bake at 350 F for 45 minutes.


Serves 2-3
