Flounder Parmesan

4 Flounder Fillets
2 eggs, beaten
Fine bread crumbs
1/2 cup Parmesan cheese, grated
1 Tbsp. chopped parsley
1/2 tsp. oregano
3 Tbsp. butter

Wash and dry Fillets. Season with salt and pepper. Dust with flour and dip in egg. Mix crumbs, cheese, paprika, salt and pepper. Dip fish in crumbs and coat well. Let stand 15 minutes. Brown well on both sides in melted butter. Sprinkle with parsley and oregano. Serve with tomato sauce.
