Flounder Roll ups With Tex mex Salsa

1 1/2 lbs. Flounder or Sole Fillets
1 cup diced vine-ripe tomatoes or 8 oz. can stewed tomatoes
6 Tbsp. shredded Monterey Jack cheese
4 Tbsp. minced onion
1 jalapeno pepper, chopped
2 Tbsp. chopped fresh cilantro leaves
1 clove garlic, minced
1 tsp. ground cumin
Pinch of fresh or dried oregano
Lemon pepper to taste
1 cup plain tomato sauce

Flatten fish Fillets. Combine remaining ingredients, except tomato sauce, and put some of mixture on top of each fillet. Roll Fillets, then arrange seam side down in non-stick baking pan sprayed with cooking spray. Pour on tomato sauce (and sprinkle with additional herbs, if desired). Bake uncovered in preheated 350 degree oven for 20 to 25 minutes.
