Baked Fillet of Sole

1 lb. Sole fresh or frozen
1/4 cup fresh lemon juice
1/4 cup water
1 small bay leaf
1/2 tsp. salt
1/8 tsp. pepper
1 (2 oz.) can mushrooms
2 Tbsp. butter
1 Tbsp. grated onion
2 egg yolks
1 Tbsp. flour
1 package frozen spinach

Preheat oven to 350 F. Combine lemon juice, water, bay leaf, salt and pepper, and marinate fish in mixture for 1 hour. Then drain liquid into a bowl, add mushroom liquid and enough water to make 1 1/2 cups. Melt butter, add grated onion and flour and stir in liquid slowly. Cook until smooth and thick. Add spinach for 2 minutes, drain and season, arrange in a greased baking dish. Top with fish and sauce. Dot with butter. Bake at 350 F for 30 minutes.
