2 lbs. fish Trout, "skinned whole"
2 limes (juice)
1/2 tsp. cumin seeds, freshly ground
1 tsp. red pepper
1 tsp. salt (not heap full)
1 1/2 tsp. coriander powder
1 tsp. garlic, fresh
Mix all the ingredients in lime juice. Coat the fish well with it. Let it soak for an hour or so. Bake at 400 F for 35-40 minutes. Keep basting the fish with its juice a few times. With a fork, pick the meat to see if it is cooked well. If not, cook it for a few more minutes. Garnish with sliced lemons and parsley or cilantro.
