Baked Fish

2 lbs. Orange Roughy Fillets
Carrots
Celery
Tomatoes
Green onions
Potatoes
Margarine or butter
Seasonings


Preheat oven to 400 F. In a baking dish place foil on bottom and place pieces of fish. Sprinkle with seasonings, such as garlic or lemon pepper (or whatever you like best); peel and slice carrots, place on top, slice celery, green onions, tomatoes (small chunks), peel and cut potatoes (small pieces). Place everything on top and put pieces of butter on top. Cover with foil and punch in a few holes. Place in oven at 350 F. Cook for 1 1/2 hours.
