Baked Haddock Italian Style

2 lbs. fresh Haddock
1 can mushrooms
2 green peppers, sliced
1 cup onion, chopped
1 cup celery, chopped
1/4 cup butter or margarine
1 bay leaf
1 (#2) can tomatoes (2 1/2 cups)
3-4 slices bacon (optional)


Sprinkle fish on both sides with salt and pepper. If possible, let stand 20 minutes. Meanwhile, simmer vegetables in butter and bay leaf for 10 minutes. Heat oven to 400 F. Add tomatoes and seasoning to vegetables. Heat to boiling point.


Arrange fish in baking dish or pan. Pour mixture over fish. Cover. Bake 15 minutes, then uncover.* Continue to bake for 25 minutes (basting occasionally) or until easily flaked with fork. *If desired, place bacon over fish.
