Baked Red Snapper
12 oz. red Snapper Fillets (or white fish)
2 tsp. mayonnaise
1 tsp. Dijon style mustard
1 tsp. lemon juice
1 tsp. chopped chives
1 tsp. chopped fresh parsley
Dash of salt
Dash of freshly ground pepper
2 tsp. grated Parmesan cheese
Arrange Fillets in shallow 1 quart flame-proof baking dish that has been sprayed with non-stick cooking spray. In bowl, combine remaining ingredients (except cheese) and stir well. Spread mixture over fish and sprinkle with cheese. Bake at 400 F for 20 minutes. Broil for 1 minute.
