Baked Seafood Scampi

1 1/2 lbs. Sole
1/2 lb. medium Shrimp, peeled & deveined
1/2 lb. Scallops
1 clove garlic
2 Tbsp. butter
1 carrot, finely chopped
1/2 cup bread crumbs
Parmesan cheese
Butter
1 Tbsp. chopped fresh parsley
1/2 tsp. fresh thyme


Saute or microwave 2 tablespoons butter, garlic and carrot 2 minutes.


Grease glass dish (approximately 8" x 12").


Line bottom with half of the Fillets.


Mix bread crumbs, halved Shrimp and chopped Scallops with sauteed mixture.


Spread on top of Fillets.


Cover with other half of Fillets.
